has anyone got a simple recipe for prawn/seafood risotto

I have bought ready cooked prawns and have garlic, onion, chilli, wine, risotto rice, etc

I do a very simple one. Fry onion & garlic in oil and butter, then add dollop of wine, stir in, repeat till you have used up wine. (It take a lot of wine, this one!) Few minutes from end stir in prawns. I don't bother with chilli.

when do you add the rice kathy or dont you notice the lack of it because odf the wine?

I would make a linguine instead

Before the wine. THe onion by itself is not very good at soaking up wine, unfortunately.

Fry the onion, garlic and chilli in oil and butter. Include a green pepper if you have one. Add the dry rice and stir for a couple of minutes (it will burn if you leave it). Then add a small glass of wine and continue to stir until it is absorbed by the rice.

Next, add chicken stock and stir occasionally until it is almost gone and rice cooked. Add in your cooked prawns at the end and let it warm through. You could also add frozen corn or peas near the end. Add salt and pepper to taste.
