When to bake cake?

Need to serve up cake on a Saturday morning. When would you bake and ice?

Bake two days before so Thursday and ice on Friday.

Ooh and if the cake is meant to be two/three sandwiched together always make an extra one incase you burn, drop or it cracks.

Personally I would bake and crumb coat on Thursday and then do the decorative icing on Friday.

Bake, cool and crumb coat on Thursday. Ice and decorate on Friday unless fresh decorations such as fruit or flowers add on Saturday

What is crumb coat? I've made hundreds of cakes & never heard the expression

@Mustbetimeforachange a crumb coat is a thin coating of icing which seals the cake, smoothes it and traps in the crumbs. You usually do it after assembling the cake and then chill it overnight before doing the final ice. It means that you have a smoother surface for icing and it prevents crumbs coming loose and disrupting the finish of the final icing and decoration.
