Rose Elliot's Brazil nut roast en croute

DD2 announced last weekend that she had become a vegetarian. I have already order a 17lb turkey so now need a veggie option

Has anyone made this this nut roast encased in pastry?

1. can it be made in advance and be frozen?
2. Can the types of nuts be varied? I'm really sure that I made something similar for a veggie friend in the mid 1980s that included pine nuts and perhaps cashews
