I have a side of smoked salmon - what else for a special brunch with friends?

Hi,

I’d live to invite my friends for a Christmas brunch in the next couple of weeks or so. I have bought a side of smoked salmon which I thought could be the centre piece. What else can I serve with it? And is it better to present the salmon just like that, plonked on a wooden board, or would you incorporate it in some (easy) dish?

I’m looking at ideas that require minimum effort so I can spend time with my friends! Thanks x

I would make a mousse (some of the salmon, creme fraiche, lemon juice, black pepper, horseradish, whizzed in a blender) then wrap the salmon round the mousse into parcels, serve with king prawns and seafood sauce.

smoked salmon, different breads, cheese, dips, olives - sour cream, blinis, some other smoked fish - or a mackerel pate.

Mini Blini - you can get them in packets of about 20 in the supermarket. (Or you can make your own if you feel so inclined.)
Warm them up, top with a piece of the SS and serve with a teaspoon of sour cream and a sprinkle of finely chopped shallot and capers.
Or just put all the extra bits in bowls for people to build their own blini.

Those little jars of salmon 'caviar' are good too. But you have to have the red stuff and make sure they're salmon eggs, and not lumpfish.
You could also have a selection of breads like pumpernickel, light rye and soda bread.

I am doing a side of salmon in a beetroot and dill cure (like gravlax, only redder) and I serve it with soda bread and hot horseradish sauce, or wasabi.
