risotto, chicken fried rice, curry with chickpea/aubergine/potato, chicken noodle soup etc. Loads!

MrsPear · 02/12/2019 15:36

Any bacon? Or mushrooms? I would make a pasta sauce - buzzfeed easy Alfredo is yum. Don’t worry about the quantities of meat - the sauce is lovely on its own with pasta.

Mix with sweetcorn and mayo, as a topping for a jacket potato
Add to a sweet and sour sauce mix with some rice
Chicken nachos - just need tortilla chips, salsa, guacamole, sour cream and cheese

Chicken pie.

maxelly · 02/12/2019 15:44

I made this the other day with a small portion of leftover tough/rissely chicken and a tin of beans we had knocking about the cupboard (also made a veggie version with just the beans if that's a consideration for anyone). I thought for sure the meat-eaters of the house were going to whinge about the small portion of meat and/or the toughness but it softened up nicely while cooking and there was actually some left in the pan after they'd declared themselves stuffed so it went into the freezer as a 'ready meal' for another day. I served with mash and veg but would be nice with crusty bread too..

Nasi goreng or chicken fried rice.

cultkid · 02/12/2019 15:54

Oh thank you so much for all of these tips 🥰 i will probably do a mini chicken soup for myself and give the boys shepherds pie using the shepherds pie mix I froze last week
I always cookbig volumes of it and freeze in takeaway trays
They can also have carrot soup depending on how hungry my husband is

Soup or pasta for me 🐒🐒🐒

Coronation chicke.

Myshitisreal · 02/12/2019 16:39

I love coronation chicken. I chop chicken finely, mix with mayo , hot curry powder, pepper, salt if desired but curry is salty, optional i add dry toasted seeds and nuts, and some dried cranberries chopped up. Apricot would also be good. I just do it to taste. The addition of nuts a seeds and fruit makes it stretch out more and makes a delicious 🥪 filling 😁 gives nice texture too.

cultkid · 02/12/2019 16:50

I've made chicken fried rice and kept back half of the meat to have a cheeky coronation chicken sano tonight in bed 🤪🤪

midsomermurderess · 03/12/2019 18:42

Mix it through a white sauce with mushrooms and, if you like some, white wine.

wifeslife · 03/12/2019 19:28

@Myshitisreal

I did fried rice with chicken sweet corn peas spring onion garlic ginger
