Just made cookies from scratch for the first ever time!
Before now I’ve only ever bought cookies from the shops/bakery and occasionally braved a packet mix Blush
They are amazing! Taste wise... 9/10. Looks wise though... 5/10 Confused
Does anybody have any nice chewy cookie recipes and cooking methods? I used a chewy cookie recipe from tasty.

Gordon Ramsay peanut butter and jam cookies are amazing.
Dan lepard spelt flour and ginger biscuits are good too

@Myshitisreal Yes please! Shock They sound amazing! Mine weren’t so exciting, just chocolate chip (well chunk actually). Milk and dark chocolate with a normal cookie colour/flavour cookie dough.
@Baboutheocelot the ginger ones sound great! I love a borders dark chocolate ginger but have never tried a ginger cookie! I actually have a bag of crystallised ginger pieces I have no specific purpose for too Grin.
@CordeliaScott oh wow! I love millies cookies 😍 only tried them once when in Brighton but they were great!

I read a tip where you add a single egg yolk to the butter, sugar and flour. It works. They taste extra buttery and rich. Just the yolk though.

@OhioOhioOhio they lasted about 3 days and still tasted fresh the whole time.
@MissBattleaxe they would have lasted that long if I wasn’t playing the ration police! And thank you! Will try that next time I make some Grin

225g self raising flour
125g butter
125g caster sugar
100g brown sugar
1 egg
Pinch of salt
(Optional) chocolate chips, nuts etc.

You can adjust the ratio of caster to brown sugar to get a paler, less flavoursome cookie, or a darker, (imo) nicer one.

Soften the butter and cream together with the sugar. Mix in the egg, then the flour, salt and chocolate chips/nuts. Roll the mixture into balls and place on a lined baking tray. Bake for 8-10 minutes at 180°C. They will look undercooked when removed from the oven, but will be fine once cooked completely.
