Need to use up a bag of spinach...any low fat ideas?

Doing weightwatchers at the moment so can't have it with cream, garlic and nutmeg which is how I normally serve it as a side dish. Fed up with salads, so maybe a soup or pasta suggestion?

Fry onions, add cubed potatoes and spinach and stock and milk, cook, whizz up - soup!

I love spinach!

Can you have olive oil? I like to have a bit of olive oil in a pan, gently cook some diced onion and chopped up chilis and garlic

Whizz spinach around pan when above all cooked

Stir into cookd pasta with some fresh basil

do what aloha said but add cumin and a little chilli and no milk and voila sag aloo!

spinach soup is very nice, chop onions, potatoes very fine, saute in a little olive oil or whatever, simmer with veg stock, salt and lots of pepper, add spinach after about 10 mins, simmer 2 mins, whizz up and serve with low fat creme fraich or something low fatty and creamy like.

potato and spinach makes a fab curry,

Do you eat tuna? Grill a tuna steak with lime and corriander and salt, cook some noodles with some fine chopped red chilli, add steamed spinach with pepper, and some grated ginger, serve tuna on top. Works with chicken too.

Eat spinach fine chopped and raw mixed with lettuce in any salad.

sorry aloha missed your soup recipe at the start..

easy curry

onions, peppers, mushrooms, chickpeas, spinach,
fry chillis, corriander, cumin, ginger, paprika, tumeric in a little olive oil, add chopped tomatoes (tinned or fresh), tiny bit of sugar, add the veg (add spinach last) simmer for 10 mins, voila.

Also nice just wilted & rolled in a flattened out chicken breast with low fat cheese. Secure with skewer & bake for about 25 mins

fry an onion, add spinach and fresh dill, cook all together, add rice (prefrably basmati), cook rice with spinach etc together for a short while, add vegetable stock..... spinach rice!

low fat ricotta 400g
ready made fresh lasagne sheets
spinach
jar of tomato pasta sauce
grated cheese
garlic

chop spinach, add a little garlic, mix with ricotta.

Using lasagne sheets cut in half - put mixture in middle of sheet and roll to close forming a canneloni tube.
place rolls in a pie/lasagne dish - all in one layer, cover with tomato pasta sauce, sprinkle with grated cheese

place in oven - usually about 220 degrees and cook until cheese has melted and is golden brown.

serve with veges - we usually just have it on its own.
