Does braised red cabbage HAVE TO have vinegar in it?

I have a red cabbage to use up with today’s leg of lamb roast. I don’t usually mind vinegar with my red cabbage but today I just don’t fancy it (it might have something to do with my frustration over Sky’s incompetence which boiled over this morning 🤬). But I can’t find any recipes online for red cabbage without vinegar - even when I use it in the search engine it spits out recipes that all have vinegar!

Any ideas for something with that nice comforting texture without the sour flavour hit?

It keeps the cabbage red. Cider vinegar is less harsh....

I melt some butter and add chopped shallots.
Then add mustard seeds until popping, then add finely sliced cabbage. Then a teaspoon each of cumin, turmeric and chilli. half a teaspoon of salt .
Little water. Leave to simmer until soft. Spicey and nicely. A very loose interpretation of a Meera syal pickle recipe . I think hers has tomato puree too. Anyway it’s nice!

It's nice with wine eg marsala and no vinegar imo

I've always assumed the wine was in place of vinegar (which was a standard substitution in 1970s Britain, where wine was uncommon).

You could use a splash of apple juice and some veg stock instead?

My old family recipe has stewed apple, onion, brown sugar, nutmeg and apple cider vinegar - comes out quite sweet and velvety.
