I’m bottling up my damson gin. Tastes divine

Any suggestions as to what I can do with the boozy damsons? They seem too good to waste, but I don’t really know what I could make with them! Would they go into Christmas cake, for eg.?

My step mum use to make the most amazing chewy damson ice cream.

I made choc truffles with chopped up boozy damsons one Christmas. Delicious!

I think that idea won't really work unless you press the alcohol out of the damsons as the presence of alcohol won't allow the resultant ice-cream to freeze very well. I tried it a few years ago. It was very tasty but was really only a cold sauce.

I LOVE the chocolate truffles idea! DH likes a good boozy chocolate, so I will have a go at that first off
