DH and I watched The Game Changers documentary today (about plant based eating) and it was really interesting. We've been doing meat-free eating during the week (for health and environmental reasons), but this has inspired me to try and have a crack at a fully plant based diet.
What to do for Christmas dinner? I usually roast a chicken with the trimmings. The veg stuff still works (I already do my roasties and yorkshires in sunflower oil rather than dripping), but I'm not sure what to make for the main dish.
All suggestions welcome - I've done some googling and nut roast or mushroom roast seems to be the most common options.
