Vegetarian meal ideas

Trying to eat less meat and when I do eat meat it will be organic which is very expensive so most meals will be vegetarian.

I'm looking for some inspiration for vegetarian meals that are fairly cheap, quick and easy to make but are filling. Good hearty meals for the winter.

fave in our house (even among meat eaters) is the hello fresh paneer and black bean stuffed naan - should be able to get the recipe online

I often chuck a run of black beans in with a jar of salsa sauce (Aldi own brand) and serve with rice for a quick dinner. You can add guac, sour cream, wraps to make it more festive.
Stir fry veg with quorn pieces
Felafel/Linda McCartney sausage toad in the hole
Lentil Dahl with roasted veg
Chick pea and veg casserole
Mashed beans grated veg (carrot or courgette is what I generally use) beaten egg, whatever herbs or spices you like and a bit of flour and fry to make little fritters.

Curry is very easy to make vegetarian-tin of chick peas, mix of any veg you like (butternut squash, sweep potato or cauliflower as the main one are the most common here), jar of curry sauce or curry paste with coconut milk.

Lentil daals freeze well and you can make a big batch.

We have chilli at least once a week. You could just replace the meat with lentils, vegetarian mince or vegetables, or follow a specific recipe.
I like Simon rimmer’s white bean chilli, Jamie Oliver’s sweet potato chilli and this one on the Bbc good food site...

Veggie sausage casserole - I use Sainsbo's Shroomdogs or veggie hotdog sausages. I make either a red wine and Puy lentil gravy and cook the Shrooms separately, or make a pasta based sauce with butter beans or green lentils plus grainy mustard, honey and paprika and add the hotdog sausages sliced up.

Mash a load of potato. Grate a load of cheese. Sauce some leeks and/or onions. Mix it all up and put in a dish. Cover with more cheese. Bake until golden brown. Nice with frozen peas and HP sauce! Probably would work with baked beans, if you happen to like the little orange monstrosities.
