Vegetarian cookbook recommendations

Can anyone recommend a good vegetarian cookbook? We are not vegetarian but keen to have more veggie meals. Preferably some reasonably simple recipes with easy to find ingredients.

The only problem with the excellent Leith Vegetable Bible is that it categorises the recipes according to type of vegetable, (tuber, brassica, etc,) rather than by course. So you need to put in a bit of work to assemble a meal, let alone a menu. Any tips on what goes with what would be appreciated!

The Prashad cookbook is amazing if you like Indian food. Thug Kitchen, Bosh, Anna Jones, HFW books are all good.

@PurpleDaisies what I mean is that when she suggests non-dairy products such as coconut yoghurt, you can use dairy yoghurt to make it vegetarian rather than vegan.

@WhiteJotter I made the bean chilli from the Vegetarian Bible this week, using black beans, and it was really delicious (I didn't actually do the lime cream, just had a dollop of Greek yogurt with it). Also the green olive tapenade is fantastic. Agree with @Myimaginarycathasfleas that the way recipes are arranged is inconvenient.

I think with regards to the Leiths Veggie Bible, it feels like a collection of side dishes rather than meals and I agree that suggested accompaniments are often useful in gauging what is needed to balance the flavours. I find HFW Everyday Veggie to be a bit too ordinary for my tastes. I suppose I want inventiveness done easy - more Cranks Fast Food.

I liked the idea of the summer blanket pie from J.O's book but I pimped it up a bit - can't remember what I added, should really make notes and I didn't add a tablespoon of fennel seeds - I thought that might be a typo - more likely to be cumin seeds
