We just had dinner which included an easy salad of cherry tomatoes and cucumber. I usually love this but the lack of taste has reminded me that the Summer is long gone...

What are your winter salads? Please share your favourite ideas Smile I like crunchy green things but I am open to anything taste and texture wise.

I ordered a nice sounding one we went out for lunch today - leaf spinach, chunks of roasted butternut squash with cumin and chilli, a sort of apple cider vinaigrette and some goats cheese. I couldn’t tell you if it tasted good though as my toddler hoovered the whole thing. Hmm

Madvixen how do you make the mustard dressing? Dressings are my weak point - I love them in restaurants etc but I have never made one I liked.

I love a good roasted veg salad - chicory, butternet squash, beetroot, and feta cheese is nice.

I use a pouch of lentils and works well with olive oil instead. This can then be a spin off for loads of other roast veg + puy lentil + green food + cheese options.

Serves 4

5 medium parsnips
2 tbsp rapeseed oil
125g puy lentils
1 bay leaf
½ onion
A few parsley stalks (optional)
A large bunch of watercress, tough stalks removed
Salt and black pepper
For the dressing
1 clove of garlic, crushed with alittle coarse sea salt
1 tsp English mustard
2 tsp clear honey
1 tbsp lemon juice
4 tbsp rapeseed oil to serve (optional)
Parmesan, hard goat's cheese or other well-flavoured hard cheese
Salt and black pepper

Lambs lettuce topped with roasted sunflower seeds & chopped up bacon with a basic vinaigrette. Is a family favourite.
