Leftover chicken from roast the day before. What can I make with it (excluding curry).

I love curry, so I always make a curry the day after a roast chicken dinner.

This time I want a change, so please will you inspire me with tasty recipes that I can make with left over chicken.

Nothing too strenuous mind, no really fancy ingredients , just something nice and tasty for tea later. Thank you in advance, advice and ideas always appreciated 💐💐💐💐 xx

Chicken gravy pie....add veg and any left over gravy, puff pastry from shop

Any sort of chicken pie really....make a super thick white sauce, add leeks or mushrooms or stilton or ham...again shop pastry or cover with cheesey mashed potato

Biryani??? I know you said not curry, but it's a bit different

Savoury Rice ??

Fancy up a fritatta with the chicken in it?

Chicken noodle stir fry? It's what we are having tonight using left over roast chicken from Sunday.

I can't give you a recipe as DH makes it up as he goes along using whatever he finds in the fridge. I just eat it.

Thank you. The chicken pie with the white sauce and cheesy mash sounds good. I can pick stuff up for that.
Never thought of a biryani, I’ll check that out for future reference.

Chicken caesar or Coronation salad, although that might be more suited to summer weather. Soup made with stock from the carcass. Add small pieces of shredded or chopped chicken at the end. Sandwiches. A chicken and tomato sandwich is hard to beat. I butter the bread as I don't like mayonnaise with tomato.

It is. Quick too. He soaks the noodles in hot water while he preps and fries the vegetables/meat/fish then adds them and a bit of soy sauce just before serving. He sometimes sprinkles on a bit of five spice when he is frying too.

Risotto, always my fave for leftover chicken. I like to thrown in some roasted butternut squash too...

I do the following:

  • cook with bacon, leeks and creme fraiche then stir into pasta
  • chop and use in chicken fried rice
  • chop and use in chicken and sweetcorn soup

I’m going with the chicken pie using ham and mushrooms white sauce and the cheesy mash.
