DS is veggie and his are:
Veggie chilli - made with sofritta (celery, onion and carrot very finely diced and gently cooked until soft in olive oil with garlic, then add chopped peppers in red, orange and yellow, diced courgettes, passata, very finely minced field or chestnut mushrooms to give it depth of flavour, smoky paprika a splash of red wine, chilli powder, cumin poder and a square of 70% dark chocolate, a can each of red kidney beans and black turtle beans. (Or rose cocoa beans - I prefer the milder beans but DS like the dark ones.)
Also veggie goulash - chunks of carrot, shallot, baby mushrooms, red peppers in passata with lots of smoked paprika and garlic, put veggie dumplings on top made with vegetable suet, flour, dried thyme, nutmeg, black pepper and salt and serve with sour cream.
He also loves dal and rice with spicy sag aloo.
Gnocchi bake with either creamy cheese sauce and leeks, topped with a nut and white breadcrumb crust or tomato, basil, olives and mozzarella topped with a cheese and brown bread crumb crust.
Stuffed squash - with bron rice, chopped nuts, crunchy onions and quorn mince if you like quorn mince.
DS also loves veggie meat balls made with veggie mince, chopped walnuts, shallots, soft dried apricots, fresh sage, black pepper, breadcrumbs and beaten egg, rolled into balls and baked. Very Christmassy smell - goes well with sweet potato fries or mash and baked red cabbage.
