I've been taking a packed lunch to work over the summer,usually consisting of boiled egg / veggie sausages / houmous with raw veg sticks.
I'm looking for something different, not necessarily hot, but that I can eat easily, sometimes in the car before going into a meeting, or at my desk (I know!).
Can anyone give me some ideas for low carb, vegetarian lunches? Especially things that could be prepared the night before.
