Does anyone have tasty chicken recipes for a young family? I have two young DD’s & I don’t feel we eat enough chicken.
I do the chicken curry, chicken pasta etc but I’m struggling to find another dish with chicken in that we all like.

Chicken tray bake is nice. Thighs and drumsticks with skin on, tossed in a bit of olive oil with garlic if your family likes it. Then you either add baby potatoes, shallots, carrots, lemon zest, a glass of white wine and fresh rosemary and bay and let it cook until sticky and bubbling. Or you add quartered red onions, sliced red and yellow peppers, chunks of courgettes, a small pack of passata mixed with oregano and garlic paste and some black olives (optional.)

Bake for 35 mins in the oven. Should be bubbling with crispy golden skin and the veg soft but not overcooked.

If you roast a chicken, chicken risotto using the left overs is popular. Cooked in the pan with butter, leeks, risotto rice, some mild cheese, a bit of thyme and black pepper and petit pois all stirred in, cooked in some chicken stock and/or white wine. Or you can make it with chopped breat or boneles,, skinless thighs.

Thank everyone.
It’s hard finding a dish that can be reheated again. As I always cook for the girls dinner time (5.30ish) so I eat with them but then dad doesn’t get home until 7 so I tend to leave him his dinner for him to reheat. Things like Risotto,noodles, rice you can’t warm up again.

Why can't you heat up risotto/noodles etc again? We've been doing that for at least the last 20 years and never had a problem! You just need a microwave 👍🏻

We have a microwave. I just thought heating them type of things wouldn’t be very nice maybe I will try it then.
