Vegetarian vegetable side dish ideas please!

So not eg sprouts with bacon!
I'm out of inspiration with my veg sides - how to make broccoli/ courgettes/ kale a bit more interesting!
Root veg are fine, but need help with greens please.
(I thought there was a thread on this bur can't find it)

I assume you want warm sides? My favourite is tenderstem broccoli pan fried with a bit of chilli and garlic! Cauliflower roasted is lovely (just drizzle in oil and turmeric and then in the oven for 25 mins). I also coat carrots in olive, salt, pepper and honey and then roast for 30 mins.

Frozen peas boiled and lightly massed with a bit of butter or vegan spread and a little mint sauce salt and black pepper.

Sprouts and chestnuts (boil sprouts, then flash fry with chestnuts, sprinkle with orange zest).

Kale works like the tenderstem broccoli above.

Tenderstem broccoli with crushed hazelnuts.
Griddled asparagus with chilli & Parmesan.
Spinach & potatoes with paneer cheese.
Creamed spinach.
Edamame with sesame seeds.
Roasted Mediterranean veg. with garlic, olive oil & oregano.
Corn on the cob with soy sauce & butter.
Celeriac mash.
White bean mash with garlic oil.
French bean 'fries'
Crispy fried courgette slices.
Kale with lemon & chilli.

Broccoli, french or similar beans, any other veg you fancy, stir fried with teriyaki sauce, some sweet chilli sauce, maybe even a bit of peanut butter.

Also, braised red cabbage is delicious and freezes well. Make a big pot full, that's side veg for ages. I like the Mildreds recipe, but there are millions to pick from.

Roasted cauliflower with turmeric and marjoram.

Sauteed green beans with garlic.

Peas cooked in passata and garlic.

Collard greens, veggie stock with raddish and carrots.

Roasted squash and sprouts with pecans, cranberries and maple syrup.

Spiralised courgette with pesto.

Courgette , peppers and onions roasted with oregano and garlic.

Roasted tomatoes in honey and balsamic vinegar.

Spinach sauteed with garlic.

Can you include dairy? Potatoes and parsnips mashed with garlic a bit of ginger and a bit of cream.

Yesterday I had asparagus, cabbage, sprouts and baby corn in a cheese sauce.

Red cabbage steamed with sultanas.

Is this for a roast or Xmas dinner or more generally? If the latter then baby corn, sweet corn, red kidney beans and green beans cooked with rice in coconut milk.

I've done little parcels with one carrot baton, one mange tout, one asparagus, 1 babycorn and tied together with a 'ribbon' of spring onion.

Red salad - radicchio lettuce, orange, beetroot, radishes, tomatoes in a dressing made with orange juice.

|Courgette stuffed with nuts, onion and peppers, can be served in a passatta sauce or on its own, nad can also be made into a main.

Yes Sassh to dairy or substitutes but I'm slightly horrified at doing anything with parsnips apart from roasting- the ultimate veg surely

I make a really nice cauliflower dish where I blanch the cauli and then pack it tightly in an oven proof dish. Sprinkle finely grated blue cheese and wholemeal breadcrumbs over the top and bake.

Parsnips also make good chips, better still sprinkle with a little parmesan.
