have you got any sunflower oil ? You could do muffins therefore not needing butter ?

I made digestive biscuits the other day cos I had no eggs and kids have eaten all the junk in the house, for those you need oats, plain flour, butter/fat, bicarb, i think the resipe was on greenchronicle.com or something green anyway

I have an olive oil cake recipe somewhere (and presumably olive oil would probably work in muffins)

Hang on....

my muffin book says not olive oil because of strong flavour - but otherwise would presumably work.

Olive oil cake -

1 orange
1 lemon
4 large eggs
115g caster sugar
175g plain flour
1 tbsp baking powder
225ml olive oil
100g blanched almonds
icing sugar for dusting

put orange and lemon in pan and cover with water bring to boil, simmer 30 mins - drain and cool. cut away skin from pith and puree in food processor (skin not pith)

Beat eggs with sugar, sift flour/baking pwnder/pinch salt, fold into egg with oil, gently fold in almonds nad fruit.

Bake 45 mins 180/gas 4/fan 160

do you have oil, eggs and carrots, most carrot cakes do well with oil instead of butter
