I bought some cheap salmon mince. But have drawn a blank at what to cook with it. Hit me up with your ideas please

Salmon fishcakes is what I would do probably.

You could also make salmon burgers or salmon meatballs though.

Salmon mince! Where does one buy that then? - I'd make fish cakes or salmon burgers. Never seen it in a shop though and am wondering if I'm just observant now!
