what shall I do with left over filo pastry?

I've only needed to use 4 sheets out of the pack for the fish pie.

Can I freeze the rest?

Or make something else?

If I'm going to make something else, in the fridge I have, in no particular order
2 aubergines
2 courgettes
onions (not in the fridge but thought I should mention them Smile)
feta cheese
cherry tomatoes
pesto
greek yogurt
fruit.

Any ideas gratefully received.

This has none of the things on your list, but when you unfreeze it is an excellent use of filo!

Feta mixed with a little greek yogurt and fresh mint wrapped in filo is so tasty! I know you dont mention fresh mint, but it's worth buying to make these fera pies.

It'll keep in the fridge for ages anyway. I've made a Jamie recipe similar to the Greek pie in a previous post, and also made a recipe from Nadiya, I think it's on BBC website - apple palm pies. Basically stewed apples in a filo pastry using a muffin tin.

thank you all. It's in the freezer now but I plan on buying some spinach and making Purple Daisies suggestion at the weekend (I even have the sun dried tomatoes already Grin).

Neptunesgiraffe - I like the sound of your idea too and will try that with the left overs after the greek pie.
