chicken breast and maybe a mushroom/garlicy sauce recipie needed....

cooking for dh to celebrate our anniversary and fancied doing something like this served with potatoes and veg etc but havent got a reicpie.

There's a fab casserole my mum does and I've done -

chicken pieces (preferably bone-in thighs, but if using breast make sure it doesn't dry out)
shallots
garlic
Campell's concentrated tinned cream of mushroom soup
white wine
stock cube

seal chicken in frying pan beforehand
bung it all in
top up with water so the browned skin of the chicken is just peeping out above the liquid
pop in oven for not sure how long, at least an hour or until cooked and tender

a bit vague I know but might give you some ideas - the campbells soup and wine give it such a wonderful rich taste!

one of my fave's:

1 onion
3-5 cloves garlic
sautee in olive oil
add juice of 1/2 lemon, 1/4c white wine, 2 diced chicken breasts, 1tbsp dried basil, 1 tbsp dried oregano & brown for 5-6 mins with onions & garlic
then add 300g sliced mushrooms
cook until mushrooms and chicken are done, add a white sauce (premade or make your own: 2-3 tbsp butter, 2 tbsp flour, whisk over med heat for 5mins, then whisk in 1c milk, adjust milk to desired consistency, add parmesan cheese, slat & pepper) and serve over pasta. YUM.
