Red cabbage - any non-Christmassy recipes?

I have a red cabbage to use up. The only thing I can think of is the braised cabbage thing that people do for Christmas, but I don't fancy that. What else can I make with it?

Red cabbage hash is also a good use for it.

I make coleslaw with red cabbage and red onion a lot, just red cabbage, onion, couple of table spoons of cider vinegar and some mayo and seasoning. It’s lovely on a burger or as a side.
