Squash recipes please!

I have an acorn squash and a butternut squash to use up. Can I ask for your best squash recipes please?

I usually end up with soup and I've just finished off a delicious stew with chorizo and chicken. I love warm, comforting stuff thats easy to heat up when I get in from work.

Peel and chop the butternut squash into cubes, drizzle honey, olive oil and cumin seeds over and mix and roast until soft and starting to brown at the edges. Great with any sort of roast meat or grilled chicken etc.

Ooh - or these kebabs. Great in chapattis or flatbread with fresh coriander and raita.

Roast with corriander, garlic and chilli, then stir into risotto, optional pancetta and chestnuts too.

You don’t need to peel BNS. just chop

Roast BNS (skin on) / sweet potato / onion

Mix with a tin of toms, tin of mixed beans, tomato purée, garlic and chilli. Chorizo optional.

Cook down, serve with sour cream.
