has anyone made Jamie Oliver's Wonderful Veg tagine yet?

It was in October's Good Housekeeping magazine and I'm making it now.

It would appear to be nowhere near enough liquid for the amount of veg but I'm not an experienced cook (only a recipe follower Smile) so I don't want to add any water without checking first.

Anyone?

Had a look at the recipe. 500ml fluid seems fine. Some of the veg are quite watery so will produce their own liquid whilst cooking I expect. I guess you can add more if needed during the coming time.

Perhaps I didn't cut my veg small enough.

It's had the 45 minutes but is nowhere near done. Some of the veg look the same as when they went into the pot. Only the bottom half is actually in the liquid.
Good job it's for tomorrow and not tonight huh? Grin

2.5kg of veg is a lot. Have you got a heavy wide pan with a lid? That should steam any veg that aren't directly in the cooking liquid and they'll reduce down.

Give it a really good stir and leave it longer with a lid on. Then recipe does say to cook longer if required.
