As the title says, can anyone point me in the direction of a trustworthy recipe, please?

Any fruit cake recipe will convert easily using Doves Farm GF flour. Delias (with extra booze - I'd soak the fruit for a few days in lashings of your preferred alcohol) is a very reliable recipe

Yes, there is actually very little flour in a Christmas cake so it's easy to make substitutions. I second Delia's recipe
