help! how to rescue tomato and potato bake gone wrong without resorting to cheese sauce?

baked with garlic and olive oil yesterday for dinner but potatoes would not cook, even after 1 and 1/2 hours still crunchy (similar recipe here)! Had to give up an it and cook something else for dinner but I need to do something with it today. we've had cheese sauce two days running so don't really want to just lather it in cheese sauce - any suggestions anyone???

PS they were new potatos which was probably why

oh yes and no cream in the house as I can't leave the house again as have 2 little ones and dh won't be back in time to bring any...

Could you not pour some vegetable stock over it, cover with foil and put back in oven on amediumish heat to cook the potatoes thru? You could also add a tin of chopped tomatoes to the stock.
I cook potatoes this way and they usually come out nice.

thank you - in the end I boiled them a bit and put it back together to warm through in the oven. will try your idea next time though!
