My Dad give me 666g of said cheese. What can I cook? Could I replace Stilton with it in a soup?
Any suggestions very welcome.

Yummy! Spread it on toast, stir it into warm pasta, pop it through a salad or just eat it on its own with a piece of crusty bread and a crisp apple!

Pear, walnut gorgonzola salad.

I was going to say melt it into pasta too. I love a good smelly cheese. I suppose you can freeze it if you are planning to cook with it later on.

My very favourite meal is cook bacon bits in saucepan, drain fat off, chop up a chicken breast and add, when looks cooked add carton of crème fresh and dash of double cream. Chop up gorgonzola into small cubes and add until melted. Keep staring on low so cream does not cuddle.Cook tagiatelli and poor sauce over. Serves 2 with a large glass of white wine to accompany. Enjoy

Stir into a cheese sauce and use for cauliflower cheese.
Use half and half with your usual cheese in a quiche, especially good with bacon or mushrooms.
Use some in macaroni cheese.
Use instead of goats cheese on toasted bread with salad leaves and balsamic dressing as a simple starter.

Puff pastry topped with figs, Gorgonzola and baked is lovely, when you take it out the oven drizzle with a little bit of honey and scatter over some rocket.

I'd be wary of adding anchovies - could make it too salty.

Melt it with port and double cream and pour over spaghetti. Garnish with walnuts. It's a lovely pink colour and tastes sublime!
