Vegetarian packed lunch - school

My ds has recently gone veggie & im struggling with school packed lunches.

He would happily live on cheese rolls with various bits of salad but there must be more.

He eats fish but isn't a huge fan of tuna so that's out

Please hit me with any ideas of sandwich fillers 😊

My daughter is veggie and also fussy. Winner! Cheese/soft cheese or egg sarnies with various combinations of salad filling. Peanut butter sandwich. Sometimes a wrap. Crackers, with a pot full of cheese chunks/tomatoes/cucumber etc. She sometimes takes a flask with soup, leftover veg stew, or baked beans and some bread and butter. Tomato/veg pasta salad.
Then the next week she will decide she no longer likes any or all of these things!

My DD loves to take pitta bread and a pot of hummus. She also likes Quorn ham with laughing cow spread and peanut butter and banana but can’t take the latter to school due to a boy in her class with severe nut allergy

Hoummous sandwiches
Egg and cress
Marmite and cheese
Cold fish finger and ketchup
Cream cheese and various different things
Sliced veg sausage
Felafels
Veg samosas
Veg sausage rolls
Quiche

In the end if he is happy with cheese rolls, that’s fine!

Mash sardines with cream cheese, season with pepper and lemon juice. A sandwich filling my mum gave me and I now give my daughter. Is good.

A super sandwich that I simplified from a book on healthy eating is to grate some carrot and white cabbage (or your crisp veg of choice), mix that with lemon juice and seasoning and add to a peanut butter sandwich.

Can't have peanut butter due to nut allergy at school & he doesn't like Quorn ham

I hadn't thought to use hummus & veg as a filler.

I'll be giving all the others a try 😊

My dc very rarely have sandwiches in their packed lunch.

Recently they’ve been taking small packets of breadsticks and chopped veg with a little pot of hummus for dipping.

Or these in place of a sandwich.

Things they’ve had in the past:
Carrot flapjacks
Cheese flapjacks
Linda McCartney sausage rolls
Frittata muffins
Leftover pizza or (if I have the time- pizza pockets www.bbcgoodfood.com/recipes/pizza-pockets )

Cold veggie sausage rolls, either make your own or the LMcC ones are nice.
Hummus, falafel and chopped salad wraps/pittas
Veggie quesadillas or pinwheels (ok so they're nicer hot but perfectly fine cold)
Savoury muffins

He’s not vegetarian if he eats fish; he’s pescatarian.

Nothing wrong with cheese sandwiches every day!

How about breadsticks, pot of hummus, crudités, rice cakes or oat cakes and chopped up cheese?

I make my two little mini pizzas sometimes.

Take a muffin cut in half and toast lightly. then rub a clove of garlic over it. spread some tomato puree and sprinkle cheese. Bake in oven for 5-10 minutes until cheese has melted.

Oh and quesadillas are okay cold too. I've made really plain ones with just cheese, but you could jazz them up with lots of different things.

My ds7 is vegetarian, he likes falafel and Hommus in pittas, grated carrot or cucumber and hommus, vegemite sandwiches, he lives nut butters but school is nut free, salad and cheese, cream cheese and red peppers, I alternate between sandwiches, wraps and pittas. He will also have cold sweet corn fritters and pasta salad and little meze bits like olives and dips .
