Horseradish - mega harvest- what do I do with it?

I came home yesterday to find that DH had (as requested) dug up the horseradish plant in the garden and he has left all the roots in a washing up bowl in the kitchen to "do nice things with" I have no idea how to process it or make horseradish sauce - Help! All suggestions much appreciated.

Grate it and mix with cream cheese.

I've now also heard it is good in mashed potato. The roots will apparently keep for a while in the fridge so hopefully will be a able to "process" them this weekend.
