Quick and easy meals for 2 after work

Just that - I’m after quick dinners for me and DH after work.

I like to make things fresh and don’t like to use anything out of a jar generally (make my own pasta sauces, cheese sauce or curry sauces etc) but don’t mind freezing things or multi cooking eg making a big bolognese and doing a courgetti bolognese, a lasagne and freezing some. Not everything freezes well though and I can be fussy about meat.

Defrosting bolognese the other day and making some pasta was great and took about 20 mins for a delicious meal.

Chicken satay and salad was good.

A steak and salad or chips is ok.

We don’t want the same things every night though.

I love meat and veg dinners but find cooking potatoes and veg a chore 🙈

Egg fried rice with stir fried prawns or salmon. I usually have some spring rolls in the freezer that I can chuck in the oven.

Mash freezes well

Orzo pasta with bacon and peas

Spanish style cod www.bbcgoodfood.com/recipes/cod-chorizo-stew (add paprika and garlic. Frozen cod works fine)

I have a subscription to Simply Cook. Each meal is under 30 minutes, you buy the fresh stuff, they send three flavour pots for each meal. Really tasty, quick and varied. This week we have had beef rendang, Louisiana linguine, red lentil curry and Japanese steak.

Make a chicken morrocan Tagine to freeze then just needs to be heated up with some couscous

This recipe is easily halved to serve two //www.bbcgoodfood.com/recipes/4404/easy-stuffed-peppers. It takes 15 minutes from start to finish and uses minimal ingredients. I often use mozzarella instead of goats cheese.

Oh wow some great suggestions

I make a good egg fried rice but usually as a side with some kind of stir fry meat and veg type dish

Haven’t tried simply cook. We used Gousto for a few weeks on an introductory meal. It was good food and an easy way to try new recipes but expensive at full price for what you get

They look good @Ricekrispie22 especially the chicken ones. I think I tried the lamb biryani when we got the Gousto box

One issue I have with DH is he isn’t keen on meat free dishes, at least in theory. He will sometimes eat a veg dish and think it’s ok but his natural tendency seems to be to think it’s not a “proper dinner” if it doesn’t have meat in it. I don’t mind eating pasta with a nice sauce or veg occasionally or jacket potato or beans on toast but he is a bit more fussy that way - shame he doesn’t do the cooking Grin
