Needs to be indulgent, fairly quick to make and easy to transport.
I was thinking Cheesecake, or Eton mess, or Trifle but a bit stuck?
Anyone come across any recipes they can share with me?

Both are quite filling and rich so you probably want something fairly light and refreshing- how about a champagne/Prosecco berry jelly? Or a pavlova?

I made this mango and passion fruit roulade for a dinner recently. It was amazing.

I've made it using long life juices from the world foods section so it wasn't as expensive and it worked really well.

Kheer, Indian rice pudding or other Indian desserts are good to follow Indian food, for thai I would opt for something fruity

Kulfi? jalebi? ras malai?
A fruit salad made with mango and melon?

Wow! Thanks for all the amazing suggestions!
I've never made meringue before....but scared of doing that.
Forgot to say will be a few young children and vegetarians for the meal...

www.janespatisserie.com/2015/06/27/lemon-posset-tart/ I was going to say lemon posset and shortbread but lemon posset tart is genius!

FlaviaAlbia · 10/09/2019 08:51

I've made the one I suggested with vegetarian gelatin. You do need to use more than the packet says for it to set but it tasted nice anyway even when it wasn't set properly.

Meringues are really hard to get wrong, I used a recipe where you leave the egg whites and sugar in a stand mixer at full power for 15 mins and they always turn out brilliantly.

Thanks everyone, some amazing suggestions, I will pick one and get back to you on how it when!
