Will a sponge cake be okay for 3 days?

I'm making our wedding cake for our Saturday wedding and it looks like I'll be able to get the Wednesday before off. If I baked the cake on the Wednesday, would it stay fresh until the Saturday? It's a one tier double chocolate sponge cake with buttercream and chocolate outside. If so, would I put it in the fridge or leave it out?

It would be fine - I wouldn’t refrigerate as this dries cake out. I would bake and wrap in greaseproof paper and a few layers of cling film. If you’re using any milk in your buttercream I would decorate as close to it as you can.

My SIL is a professional cake maker. She bakes her cakes days in advance and keeps them wrapped, but not in a fridge, then ices them the night before. She says they then settle and ice better. I have had several of her cakes and we were still eating them days after the event.
