pack lunch ideas for me andthe girls, plus what can i do with cous cous?

need pack lunch ideas for harefield, dh has a fridge in his hospital room, so thats ok for keeping things chilled on these very hot days we are having.

plus, what can i do with the pack of cous cous thats sitting in my cupboard looking all forgotton. i usually buy the ready prepared stuff

Pour boiling water over it, leave it to sit for about 1/4 of an hour, fork through some olive oil and add baby tomatoes cut in half if large and chopped cucumber, cheese, (feta is best) olives and chopped mint. Stuff in pita breads.

put couscous in a big bowl .. make up some stock .. pour over couscous so there's about twice as much water, cover with plate and leave for 5 mins .. fork through

turn into salad like rh ssays

put veg or chicken stock in the water before making the cous-cous, roast a bunch of veggies in oliveoil and garlic, mix in with extra oil... add small cubes of halloumi/tuna/sweetcorn - whatever the 'bits' are fave/liked by the girls. keep cool and eat as a salad. yummy.

you could make sanwiches out of tortilla wraps instead of normal bread. or pitta pouches. both keep you stuffed longer than normal bread i think. can fill with anything; bacon and avocado, or choc spread. whatver floats the boat.

We do mini pitta stuffed with whatever takes your fancy, wraps, and today we did homemade lunchables, crackers, nice ham, cheese, cut into squares so he could stack them in the same way but it was all 'proper' food not plastic!

My couscous recipe: fry one shallot and a couple of other veg (courgette, mushroom, broad beans work well) in lots of olive oil, cook the couscous up in boiling water, stir in the veg, salt, pepper and a big dollop of creme fraiche.

Or combine couscous and packed lunch by cooking and cooling the couscous, mixing with tomato, spring onion, kidney beans from tin, drizzle oil and lemon juice over - cold couscous salad
