Quick after work canapés/nice nibbles

RockingMyFiftiesNot · 18/08/2019 19:43

Would like some ideas for home made nibbles to go with drinks after work. informal and homely rather than fancy and some element of being homemade.
I can shop ahead, and do some prep the night before, but will only have an hour to assemble on the night. I have been making nibbles for years but have used up all my quick and easy ideas with the same group several times over.
No dietary requirements, don't mind whether hot or cold or a mix of both
Thanks .

Chicken kebabs on cocktail sticks lend themselves to being prepped in advance. If made the night before the chicken takes up more of the flavour.
Bruschetta also works, slice bread and rub with a clove of garlic, chop tomatoes, basil the night before. Then when you get in you just need to Toast bread and top with the tomatoes, salt and balsamic.
Cherry Tom, basil and mozzarella on a stick
Olives
Crudités and dips
Nice crisps
Smoked salmon blinis

I like thin sliced but substantial wholemeal bread (ie. a bit chewy and from a proper bakery), buttered, with smoked salmon layed over in a single sheet, cut into diamonds, tiny sprig of dill on each one. Wedge of lemon to squeeze over.

Nothing better than a board of cheeses and a board of charcuterie with nice baguette or sourdough bread!

FamilyOfAliens · 18/08/2019 21:01

Buy them all from M&S Smile

Another vote here for a cheese board, or grazing table. Maybe with some home made pate or a salmon terrine?

RockingMyFiftiesNot · 18/08/2019 22:25

Thank you all. I often do cheeseboard and meats with this group for lunches. Bruschetta a good shout.

Roasted new potatoes split open and filled with sour cream & chive dip
Cubes of melon on a skewer with Parma Ham wrapped round
Baby balls of mozzarella on a skewer with cherry tomatoes
Squares of cold frittata
Prawns in marie rose sauce served in little gem lettuce leaves - this is also a good way to serve smoked fish pate
Puff pastry mini wheels (ready rolled puffed pastry, spread with olive tapenade or pesto, rolled up, sliced and baked)

This always goes down well and suitable for summer. Get fresh crabmeat (it has to be super fresh) and mix it with mayo. Take an endive and peel off the leaves and arrange on platter. Scoop a generous spoon of the crabmeat onto the leaves and then sprinkle with a bit of paprika. Yum!

Glace cherries wrapped with streaky bacon and cooked. Sounds awful but taste lovely.

Half a cherry tomato, a mozzarella pearl, and a cube of lightly toasted ciabatta on a stick, drizzle with pesto. Fiddly to assemble, but really worth it. Leave out the toasted ciabatta if it's too much faff.

Watermelon slices with feta and mint sprinkled on.
Takes about 5 minutes and is delicious

RockingMyFiftiesNot · 19/08/2019 21:08

Lots of lovely ideas, thank you all

My current favourite is warm olives, with lemon and feta, so simple but really effective

palahvah · 22/08/2019 05:41

Watermelon/feta/mint you could also do as little raw kebabs - optional black olive as well

Everyone loves tiny sausages on a stick!

Chicken breast, cut into bite size pieces. Chuck in a freezer bag with half a bottle of Mary Berry's Mustard dressing from waitrose. Seal and squish around to thoroughly coat. Do this night before.
Spread on baking tray (line with foil as it's a bugger to clean otherwise)
Stick under hot grill till brown, turn over and grill other side. Serve on cocktail sticks

Cheese straws

1 packet of ready rolled puff pastry
Dijon mustard
grated parmesan

put the pasty on a baking sheer, score into strips about a cm wide, 'butter' with the mustard, sprinkle on the parmesan and bake for 15mins. Once cooked they will snap into 'straws'.

Stuffed Apricots - a bit of a twist on devils on horseback

1 pack of dried apricots, soak in water overnight.
1 pack of brie
1 packet of streaky bacon

Once the apricots are soaked they look a bit like an egg yolk with a slit where the son has been taken out.

Chop up the brie and put in the apricots, wrap with bacon and secure with a cocktail stick, bake for 15 - 20 mins

Nacho's maybe? Make all the dips yourself?
Always quick and easy 😊
