How many cloves of Garlic

Adding sweet potato, Olive Oil, slices of Pepper and some onions cut into 4

Will that work??

I guess if you leave the cloves whole and don't slice or crush then a complete bulb would be fine. Sounds delish!

Should I blanch the garlic - I love cooking when I haven't got a clue (MN make it so easy)

I wouldn't blanch the garlic. If you want to you can 'squash' the cloves with the flat of a knife to release the flavour a bit.

Not a fan, personally. Maybe just some black pepper - but you go for it if you like it
