My ds wants carot cake for his birthday...

I have a really stodgy difficult recipe and a lovely muffin with cream cheese icing recipe.

What is needed is one suitable for a b'day cake for a 3 yo. birthday tommorrow. No big nuts as dd is 16m and i would like her to hve a piece.

make the muffin recipe in a big round tin - cook it longer and cooler than you would for muffins though.
(did this successfully with a choc muffin recipe for DH's birthday cake)

`This is my active birth teachers and it's fab.

2 cups plain flour
2 cups dark brown suger
1 tsp bicar and 1 tsp baking powder
1 tsp ground cinnamon
4oz raisins (or walnuts or bit of both)
3 eggs beaten
3 cups grated carrot
1 cup oil

6oz philadelphia
2 tsp vanilla extract
3/4 cup icing sugar
1/2 cup softened butter

Preheat oven to 180 or gas 4
grease an line 8 in cake tin
sieve flour and spices in large bowl
add rest of ingrediants for cake and mix
add this to carrots, oil & eggs and give a good beat
turn into tin and bake for approx 1 hour or till skewer comes out clean
turn to wire rack and cool

Beat butter, cream cheese and vanilla till smooth
slowly add sieved icing sugar till it forms smooth pasts
spead all over cake (i like to slice cake in half and spread on the inside too)

sounds good thomcat (similar to the muffin recipe) I might use melted butter instead and p'haps I can grind up the walnuts - food for thought thank you.

more welcome and I need to make some fondant carrots as well. I have escaped the cake making for birthdays up to now so I am feeling the pressure.

The carrot cake was a triumph - thank you very much Thom cat (strongly advise melted butter instead of oil though)

(if you do use oil in this kind of cake a pinch of salt really helps)
