Need some inspiration for breakfast and lunches

I am hungry and cannot think of anything I’d like to eat.

For breakfast I like a sausage sandwich and I really like the ready made sweet (crepe) pancakes. I also love a banana. Other than the banana this is not v healthy.

For lunch, sandwiches. I like cheese and red onion or salad and ham with mustard and salad but again I’m bored and I’m finding I don’t eat a proper breakfast or lunch.

Any ideas?

I just found this which looks nice but not for every day

I should go shopping as a full fridge usually inspires me to cook.

I think finding some recipes and going shopping is a better option than going to McDonalds for breakfast? 🤔

If I can be bothered cooking then eggs are good for breakfast - scrambled, poached, omelette. If not I like really nice nutty granola with full fat Greek yoghurt.

Thanks for replying.

I do like scrambled egg but sometimes feel a bit off egg 🥚

I do love granola. That’s a good idea - plus quick and easy!

How about banana pancakes? A ripe banana, an egg, tbsp of self raising flour, half teaspoon baking powder and splash of milk blended until smooth then fry large dollops of the mixture, turning over when they look bubbly and slightly dry on top.

I bought some frozen sausage patties, I had one in a muffin with a friend egg, it keeps me going until I have an early dinner.

Banana pancakes sound good

Haven’t tried sausage patties before - makes me think of McDonalds!

I buy the patties in Iceland, the round ones have a higher meat content than the square ones and cook quicker than a traditional sausage. You could put a cheese slice on and use a ring when frying the egg if you wanted to recreate a takeaway. They are handy to have in the freezer and I freeze the muffins, you can freeze your own scrambled eggs too.

Yeah it is handy to have things in the freezer for when you fancy it @HeatedRollers Not sure we have an Iceland but will see what Morrison’s / Lidl has

The frittata looks good too. I do like to mix my scrambled egg with pepper, mushroom and tomato and that looks similar

Thanks everyone

Smoked salmon and cream cheese bagel
Beans on toast
Grilled mushrooms and tomatoes on toast
Toasties
Crumpets
Boiled egg
Oven night oats
Fruit and yoghurt

ReeReeR · 13/08/2019 17:38

Grilled mushroom and toast might be nice
Haven’t tried overnight oats but have been meaning to
Fruit and yogurt would work with granola

I like beans on toast but not usually for breakfast

Don’t like smoked salmon

If you don’t like salmon there are lots of alternatives to have on bagels
Smoked salmon
Avocado
Cream cheese and tomato
Peanut butter
Melted cheese & Lee &Perins
All work well on toasted English muffins too.

Malt loaf is also good for brekkie.

ReeReeR · 15/08/2019 08:24

No smoked salmon for me

Not sure about cream cheese for breakfast but do love it on s bagel

I was watching something yesterday and they were eating avocado on toast and I thought I must try they

I used to sometimes have Nutella in a bagel from Bagel Nash 🥯

The other thing is I’m off work at the moment and making breakfast now is one thing but I’m back at work next week and will most likely revert to buying breakfast every day

I love a croissant for breakfast, either sweet with jam, or savory with ham and cheese, plus its portable so can be eaten on the go if I'm running late
For lunch, soup or salad using up anything in the fridge with my sandwich makes it feel healthier and more substantial. Also have a look in Pret for some more unusual sandwich options and recreate at home

ReeReeR · 15/08/2019 09:20

I do love a croissant or pain au chocolat, and portable as you say. I might get some form the supermarket and take them to work. Buying breakfast and lunch is so expensive!

Soup is a good one too. I do need to start taking lunch in really...
