We are trying to cut down on meat but have a very fussy ds which makes vegetarian recipes tricky. He hates onion, peppers, aubergines, broccoli etc.

He loves beans (kidney and borlotti). I make a beany bake - basically beans in a tomato sauce, then put in wraps and baked with cheese on top. I also make bean burgers but am a bit bored with these 2 recipes.

Does anyone else have any bean-based recipes they can suggest please?

You could put your bean/tomato combination in a dish and top with mashed potato to make a veggie cottage pie

Spaghetti bolognaise but use lentils or chickpeas in place of the meat

A can of kidney beans in chilli sauce and a can of drained black beans heated with onion (optional, Im sure) chilli and garlic, put crushed tortilla chips, grated cheese and sliced spring onions on top and then bake for 10 mins

Here are some I do that I’m sure you’d find recipes online for:

Sweet potato and black bean enchiladas
Quinoa and cannellini bean burger
Vegetarian shepherds pie (lentils and/ or beans make the “mince”)
Cauliflower and chickpea curry

Beanburgers. Dry them out in the oven first then blitz with some spices/seasonings. Mix in with some grated carrot/onion/corn and bind with an egg. Shape into patties and fry in a pan like normal burgers.

Would he eat butter beans? Greek giant beans are lovely. I also like them in a veggie chilli.

If you're trying to cut down on meat rather than eliminate it entirely, try altering the meat-bean ratio in things like chilli con carne - more beans, less meat.

Personally, I make a lot of feijoada which will be mostly beans but with small amounts of meat or chouriço for flavour.

Have a look at Nadiya Husseins BBC2 programme this week. She made falafels from baked beans and they looked really good
