Lots of red meat - recipe ideas please

I’ve just got a meat box containing lots of red meat so I’m looking for different meal ideas with the following

Strips of beef
Lamb loin chops
Pork saltimbocca
Fillet steak
Mincemeat

Any ideas? It’s good quality meat so I fancy doing something extra tasty with it.

What is the mincemeat? Pork, beef or lamb?

I also use eatyourbooks.com to find recipes either in my own books or online

I would leave the lamb chops really simple and grill /bbq and serve with buttered new potatoes and broad beans

The saltimbocca I would cook with sage and then serve with garlic mash or parmentier potatoes

Fillet steak - maybe an individual version of beef wellington
