Recipes for beetroot

I have had a fruit and veg box delivered and in there is some raw beetroot.

I have never cooked with it before and have no idea what to do with it.

Any suggestions would be welcome, thank you 🙂

I really like this salad. Not necessarily as fancy as they do it here, mind you. I just use the prepared mackerel strips from the supermarket, whatever salad leaves I have available (although rocket or watercress do go with it really well), & beetroot, plain yoghurt, horseradish from a jar, & some lemon juice for the dressing. Makes a good packed lunch. Very pink! Leftover boiled new potatoes go with it quite nicely, if you can cope with them also being stained vivid pink...

I love beetroot would eat it every day if I could. This is a good beetroot risotto but I don’t add thyme and add horseradish instead.

Can be used in dessert type dishes too.
And brownies.
It's good in a cake - with chocolate.

Chop up the beetroot into wedges and sprinkle with dukkah (can buy this in supermarket spice section; got mine from Morrison's; it's nice) and roast for about 15 mins or so. Meanwhile make a pastry case (ready rollled shortcrust) and blind bake. Mix a tub of soft goats' cheese and a tub of Philadelphia together with the zest of a lemon and some chopped parsley and salt and pepper. Spread this in the blind-baked pastry case and cook until just golden (about 15 mins) then put the roasted beet slices on the top. Drizzle over with pomegranate molasses and warm it all up together for a few mins. It's v good and can be posh if you make it look pretty or everyday if you just bung it all together like I do.

One of my favourite salads is grated beetroot and carrot. You can keep it to that with a drizzle of olive oil, or add fresh coriander, avocado, leaves, anything you fancy it’s delicious.
