Chicken breasts with skin on
Leeks chopped in large chunks
New potatoes half the larger ones
Carrots cut in half length ways then half again
Shallots peeled
1/3 a bottle of rosé
Chicken stock melt
Thyme leaves

Take a large roasting dish and drizzle olive oil over the bottom. Add the following:

2 red onions, quartered
New potatoes, halved
3 mixed peppers, roughly chopped into large chunks
2 courgettes, thickly sliced
Cherry tomatoes

Drizzle with more olive oil. Sprinkle with thyme. Season.

Place sausages on top.

Roast in a hot oven for about 40 minutes, turning the sausages and veg at least once.

I like chicken thighs in a traybake - plenty of meat, better flavour and stays moist.

Chicken, onion, garlic, yellow pepper, courgette, tomatoes (halved or quartered), potatoes (cut into good chunks, not too big) olives, lemon juice, olive oil, thyme, salt, pepper.

So tasty.

Mix together 1 tbsp oil, 1 tbsp grain mustard and 2 tbsp maple syrup
8 sausages, halved by pinching then twisting the sausage in the middle, so you have 16 mini sausages
500g new potatoes quartered
2 red onions both cut into 8 wedges

Mix everything together in a roasting tin and cook at 180 for 45-50 mins

Chicken thighs with ras el hanout (or similar spice mix) on them, new potatoes halved, onions cut up into wedges, and some slices of chorizo (from a whole one so you get nice chunks). Roast in the oven.

roasted gnocchi. Pour boiling water over a packet of gnocchi (two packs maybe for whole family) and then mix with herbs and veg of your choice in roasting tin and olive oil. Could add bits of chorizo or bacon if that's your thing. Roast until the gnocchi is getting a bit caramelised in places. Can drizzle with pesto at the end.

My favourite is one I do with cauliflower, aubergine, onion, potatoes, tomatoes and thin cut lamb chops over the top which have been marinading in curry spices. Fresh chopped coriander when it comes out of the oven.

That lamb curry one sounds lovely.

Our family fave is chicken thighs, chorizo, cherry tomatoes, red pepper, red onion, new potatoes and oregano.
