Mexican buffet!

My dd is having a small wedding. Approx 25 guests. I have offered to cater as money is tight.
I'm used to cooking for a crowd so not too worried about that. She wants Mexican theme.
Any ideas that can be produced in bulk?
There will be some table seating but from what she tells me, possibly not enough for all, hence I'm thinking buffet in case some folk have to balance a plate on their lap.
Any ideas,, PLEASE?

Thomasina Myers has some great recipes if you want Mexican but something a bit different/more special - e.g. pork pibil

I think Billy Connolly said all mexican food was the same just folded differently. I've a Mexican penpal and she makes tamales

Pork pibil, mole, carnitas, Mexican green rice salad, Caesar salad, elotes (in a cup), churros or tres leches cake for dessert

When I do a Mexican buffet I always do a pot of spicy bean stew. It’s tasty and both vegan and gluten free.

I also do chicken and beef fajitas, chilli con carni, rice, chips and dips, and salmon ceviche.

It’s an absolutely great choice for these type of numbers self catering.

I've done churros for a party before. Buy in bulk from Costco if you don't want to hand make and then buy a ton of different dipping sauces.

I'd also do pulled pork or chicken in a slow cooker if you can get your hands on a couple of big slow cookers.

Also a chilli (maybe veg for the vegetarians) ?

And lots of toppings, sides and wraps.
