Give me your best frozen veg recipes

I'm expecting twins, and with 2 other young DCs, I'm after some easy recipes to try out using frozen veg ahead of their arrival. It seems like such a time saver not having to do all the prep etc. but I can't see to get it right!

Please give me your best family recipes using frozen veg.

Mashy peas - cook frozen peas in the microwave, a minute more than you'd usually do. Drain them and then use a potato masher to mash them up a bit. Add salt and pepper, a bit of mint sauce and a dollop of creme fraiche.

Frozen spinach disks stirred into everything and anything - particularly creamy or cheesy sauces!

I do an Ottolenghi inspired freezer dish - brown some beef or lamb meatballs (even ikea ones work), add a bag of frozen bean and pea mix, a bunch of salad onions cut into 2cm lengths, as much garlic as your kids will stomach (6 cloves if me and DH, about 2 if with kids), a bit of thyme and juice of a lemon. Add stock from a chicken or veg cube just to cover the beans and simmer until tender, about 25 mins. Add a final squeeze of lemon and any chopped green herbs you have to hand just before serving (flat leaf parsley, mint, coriander, dill, anything). Serve with rice or couscous or even just bread to dip into the sauce (I like to bake some garlic baguettes to go with this).

I tend to only buy frozen butternut squash these days because it’s so much easier than wrestling a whole one. I just tend to season well with black pepper and rock salt and put in a baking tray with a few cloves of garlic spray with oil and roast. Nice as it is in a salad or with fish or meat or added to a fritata.

Firsty congratulations on your imminent twin arrival. Hope all goes well.

Cauliflower cheese. Add a pinch of nutmeg to the sauce. Freezes great. As long as you cook the frozen version you can re freeze no bother.

Having a brain freeze here, but I often use left over mash mixed with blended leftover veg, dip in flour, fry off and then freeze. They are delish.
