Are day old potatoes ok to use?

I peeled them yesterday and left them in water with the intention of boiling them for tea last night.

But we are out instead. Will they be OK to boil today or do I need to peel fresh ones.

I’m embarrassed I have to ask Blush

They'll be fine. Might looks a bit discoloured but fine to eat.

They will be just fine. Any part that is out of the water will discolour but you can just cut that bit off if needs be.

I wouldn’t hesitate to use them OP. Change the water though.

I often peel potatoes day before use if I have a lot to do on the day (for example Christmas Eve) and just keep them in water.
It will be absolutely fine!

greentea I have no idea what could happen, but I didn’t want to mess up timings with needing to make them again.

I’m going to mash them, so I guess that might help!
