Specific dietary requirements - guest

We have some old friends coming to stay this weekend from abroad & one in particularly has quite specific dietary requirements.

She is currently non meat eating, non dairy and gluten free, as well as requested for “healthy” meals.

I’ve sent her a message asking if she’s currently eating fish (she tends to eat fish when she’s non meat eating) but no response as of yet.

Think we are fixed for one night (mezze/tapas style platters) but could do with inspiration for breakfast and lunch.

Any ideas for easy vegan & gluten free meals? Outside of asking her to just supply her own food Grin

gluten free cereal and lacto free milk.
gluton free bread for toast.
could you make some gluten free muffins.
scrambled eggs or omelette
tortilla
smoothie and fruit salad with yoghurt
turkish tomatos and baked eggs
ratatouille

chickpea curry
veggie stir fry and noodles.
veggie and chickpea mixed bean stew
a lentil and veggie ragu.instead of spaghettie you could do courgetti
vegan chilli with jackets

This soup is lovely and seasonal for lunch, great hot or cold (leave out the creme fraiche for DF and I use less stock for a thicker soup)

Gluten-free goddess is a good site, many recipes are dairy free and vegan too.

Breakfast is tricky unless you have eggs... maybe ask what she normally eats for breakfast. Best GF bread is Genius or Warburton's, or the Schar cereal one.

Leftover meze for lunch?

Breakfasts:
Coconut or soya based yogurt with berries and nuts
Veggie omelette
Cornflakes/porridge and vegan milk (Ask her preference, I like soya but oat or almond are good too)
Overnight oats/Bircher muesli with vegan yogurt and/or milk, grated apple, berries, dried fruit, nuts, coconut.... Oats are naturally gluten free, specific gluten free oats are only necessary for those with coeliac disease
Shaksuka

Lunch:
Salads with any of the following olives, avocado, chickpeas, hummus, vegan tzatziki made with coconut/soya yogurt
Veggie soups with oat crackers
Roasted veg Spanish omelette (can make a big one and slice for multiple meals)
Tabbouleh (make with rice instead of bulgar wheat)
