Making asparagus and mushroom risotto for friends tomorrow, what’s your favourite summery salad to go with it?

Honestly, I wouldn't do anything particularly fancy. With that kind of meal, I'd just do a very simple green salad - mixed leaves including rocket, chopped cucumber, some spring onions. Maybe top with some avocado and toasted pine nuts. And a basic lemony dressing.

Yes, agreed, I'd keep it simple with a risotto.

I made a lush Israeli giant couscous salad this week but wouldn’t pair that with risotto (it basically is a cold risotto to be fair)

carrots & apple (both grated)
dressed with sunflower seeds, sunflower oil, lemon juice and honey
very refreshing

Slow roast cherry tomatoes (halved) mozzarella, rocket, pinenuts and balsamic glaze.

I'm enjoying very thinly sliced radishes on my salads at the mo and belazu's balsamic pearls are a bit special.
