OKRA - What to do? How to cut?

Anyone know how to stop okra going sticky and what can i do with it. Have had it in a curry but would like some other ideas.

never cook more that 10mn, that's the only trick.

You can make a yummy clear soup as follows:

Fry over medium heat

  • handfull casserole beef or lamb -2 onions -2 cloves garlic
  • chopped parsley and coriander
  • pinch saffron
  • salt and pepper

add 3 pints water and simmer 1;30 hour
add okra and cook a further 10mn ( you can also add a handfull rice at this stage.

warm tomato okra salad

make a rich tomato sauce by frying

  • 6 tomatoes cut in big chunks
  • 2 cloves garlic
  • lots of olive oil
  • pinch salt and tbsp sugar
  • 1/2 tsp cumin and chopped parsley

Throw in the sliced okra and cook further 5min with lid on.

I love this veggie and the easiest way to stop it going sticky is to touch it as little as possible. I eat it as an accompaniment (sp) prepared as follows:
Top, tail and wash the ocra but handle gently.
Fry up some diced onion, bit of chopped tomato (not tinned) and garlic.
Add enough stock to cover the fried things but not so they are swimming IFSWIM.
Place the clean okra on top and put a lid on the pan.
Put the pan on a low heat for about 10/15 minutes but do no stir.
Eat
