Coronation chicken sauce - can I make it?

It's my grandmother's recipe which I always use, but I'm doing it in Saturday for 60 people for my Mother in law's 70th birthday lunch. The recipe is very basic and consists of curry paste, mango chutney, full fat Greek yoghurt and full fat mayonnaise. I was hoping to make up the sauce on Thursday morning and refrigerate, to mix with the cooked chicken on Friday. That should be fine, shouldn't it?

I was going to serve this with new potatoes, but won't have time to cook that many as I have a very old aga which is massively playing up at the moment! So we've changed it to quick cook pasta (not as nice, but needs must!). I was going to cook it, cool it, and then dress it with olive oil and lemon juice, and mix in cherry tomatoes, cucumber (deseeded), and chopped yellow pepper. Can I do this on Friday, but it can't then be refrigerated, but can be put in a cool pantry, or will I have to wait until Saturday morning? 😬

I would make the sauce in advance and keep well refrigerated, but I would not mix the chicken in until about to serve.
I would service rice rather than pasta, so rice salad, but again I would probably cook the rice in advance, the day before, and keep chilled until ready to assemble.

New potatoes do very well in the microwave. Or could you ask a neighbour’s if you can do them in their house?

I would make the sauce in advance, but I wouln’t mix in the chicken til just before . To be honest, I have no idea why!

I can't cook rice either, it takes too long on the aga, which is why I'm not doing it, and don't have enough fridge space to keep it chilled. No neighbours I'm afraid, I love in a big old house that we are renovating, hence the old crap aga! 😲

Is this a “bring something” party? Could you ask someone else to do some spuds and you dress them at wherever it’s happening?
(Fellow member of the Aga Club here- even when they are working at their best they are pretty temperamental!)

Bulghar wheat salad would work well as you just put it in a bowl, pour on boiling water, leave for about 15 mins and then squeeze in a clean tea towel to remove sny excess water. No Aga required!

I wouldn't make and dress the salad a day ahead, especially if not kept in fridge. You can chop/ prepare veg and prepare on the day. Also pasta as it will absorb dressing better when warm.

Unfortunately it's just me, and people are coming from too far away to bring food. We have just moved here, so don't really know anyone yet. I would happily go for bulgar wheat, but I have served them couscous before and it didn't go down well, pasta is even a bit risqué! 🤣🤣. I'll have to just cook it in the morning and add the veggies too, looks like it'll be a very early start for me 😬
