Emergency leaving our house for 3 nights next week, staying in a local air BnB, can’t afford to eat out - what would you cook assuming very limited kitchen supplies?

Mainly trying to think of the dinners as every lunch will be sandwiches. Live in US so proper beans not an option and DD hates them anyway....yes pasta pesto will likely be one night

Veggie and cheese Omelette
Salad (a substantial one with grains and a protein)
Rotisserie chicken and veg/salad
Pizza or quiche
Fish fried or baked in a flavoured butter, baby potatoes and veg

With the kettle, you could make up a packet of couscous which is ready in less than 15 minutes. Just soak in boiled water. Most supermarkets sell Mediterranean flavour www.tesco.com/groceries/en-GB/products/253748557 which is delicious with crumbled feta cheese, chopped red peppers, cucumber and cherry tomatoes.

You can get tins of tuna with different sources/dressings. Or just get plain tuna and add a tin of sweetcorn and some mayo. I get the tin of tuna in a Mexican dressing and have it with Mexican microwave rice and sweetcorn.
Microwave rice is a God send. Stir in a spoon of cream cheese, some peas, chopped ham and a twist of pepper.

Tinned taco beans in a spicy sauce www.tesco.com/groceries/en-GB/products/259061910 with heated taco shells or heated tortilla wraps, sour cream, grated cheese, salad and salsa.

Chicken couscous salad www.bbcgoodfood.com/recipes/1706/nocook-chicken-couscous Substitute the frozen peas with tinned sweetcorn.

Couscous is a great idea actually, my big issue is I won’t have my usual store cupboard of oils and herbs and spices but one of those ready mixes would work

This time of year I'd just eat salads, corn on the cob, bread and cheese, that kind of thing. Buy a bottle of Newman's own balsamic salad dressing and you can use that for almost everything.

Could you make and freeze a couple of things at home to take with yoj e.g. casseroles chilli curry??
